Palm Coast City Council Considers Lease for Redefined Food Co at Southern Rec Center

During the Tuesday January 9th, 2024 meeting at 9am, the city heard a presentation on the proposed lease with local business Redefined Food Co. The local clean eats restaurant and meal prep business has been operating in Palm Coast since 2018, and is currently in discussions with the city to move into the Southern Recreation Center, if the lease is approved by the City Council. Serendipity Marketplace is a brand new vendor marketplace that currently has booths featuring 50 local artists. Ashley Skaer-Tilley saw a need for a marketplace in Palm Coast and worked to fill that need. Serendipity Marketplace is Skaer-Tilley's second business. She is an event planner by trade, and when she saw the lack of vendor markets here in Palm Coast she decided she would be the one to get it started.
